Bacon-Wrapped Spiced Plantains with Jalapeños

Bacon-Wrapped Spiced Plantains with Jalapeños

1. Preheat oven to 425°F; line baking sheet with foil. Thaw plantains. Slice jalapeño thinly (remove seeds and membrane, if desired). Slice bacon in half lengthwise (wash hands) and place flat on cutting board.

2. Toss plantains and 1 1/2 teaspoons Caribbean seasoning in medium bowl to coat. Lay 1 plantain at the bottom of each piece of bacon. Top each plantain with 1 jalapeño slice, then wrap tightly and secure with toothpick.

3. Arrange finished plantains on baking sheet and sprinkle with remaining 1/2 teaspoon seasoning. Bake 25–30 minutes until bacon is crisp. Serve.

  • 2 lb frozen plantains (maduros)

  • 1 jalapeño pepper

  • 8 oz bacon

  • 2 teaspoons Caribbean (or jerk) seasoning, divided
