Sweet Potato Pancakes

Set butter out to soften. Preheat large, nonstick sauté pan on medium 2–3 minutes. Place potatoes, eggs, and baking mix in large bowl; whisk until combined.

Coat pan with spray and add 1 tablespoon butter. Add ¼ cup batter (for each pancake) to pan. Cook 2–3 minutes on each side until golden. Remove pancakes from pan; repeat with remaining butter and batter.

Arrange pancakes on serving plates. Top with butter, syrup, and whipped cream, if using. Serve. (Makes about 12 pancakes.)

Barbecue Ham Sliders with Slaw

Cut ham to fit buns; drain banana pepper rings. Place ham slices in shallow, microwave-safe dish; add barbecue sauce and water. Cover and microwave on HIGH 2–3 minutes, stirring halfway through cook time, until 165°F.

Meanwhile, combine coleslaw mix, banana pepper rings, and dressing; toss to coat.

Slice rolls open for buns, if needed. Arrange bottom halves of buns on work surface; top each with ham, sauce, 1 slice cheese, ⅓ cup coleslaw, and 1 tablespoon fried onions. Complete sandwiches with top halves of buns. Serve with remaining coleslaw on the side.

Leftover Turkey Corn Chowder

Preheat large saucepan on medium-high 2–3 minutes. Cut bacon into ½-inch pieces (wash hands). Place bacon in pan and cook 4–5 minutes, stirring frequently, until lightly crisp.

Cut/shred turkey into bite-size pieces. Add turkey and frozen seasoning blend to pan; cover and cook 5 minutes, stirring occasionally. Drain corn; stir corn and potatoes into pan. Cover and cook 5 more minutes, stirring occasionally.

Stir in cheese sauce, milk, and seafood seasoning; cover and bring to a boil. Combine flour, water, and broth; whisk until smooth. Add flour mixture slowly to chowder, whisking continuously. Reduce heat to low and cover; simmer 5 minutes, stirring occasionally, until thickened. Serve chowder topped with shredded cheese, if using.
